
These beautiful savory muffins were inspired by Thursday’s energy to bring in luck, abundance and good health. They contain three types of herbs that are blossoming in my garden at the moment and I can feel that spring is near.
What I love about using fresh herbs in my cooking is the scent that fills my kitchen from when I chop them, to infusing them in the food, when I’m cooling the muffins after baking, to the best part of consuming the delicious end product.
You and your whole kitchen will end up buzzing from the amazing energy and benefits that the scent from these herbs release throughout the process.
Ingredients:
1 & 1/2 Cups of Plain Flour
1 Cup Milk
1 Cup grated Parmesan cheese
3tsp of Baking Powder
50gr of Butter
2 Eggs
1tsp of Salt
A Pinch of White Pepper
1tsp Finely Chopped Basil
1tsp Finely Chopped Mint
1tsp Finely Chopped Rosemary
Method:
Pre heat oven to 180C.
Sift four and baking powder into a bowl and make a well in the center.
Melt butter and add all herbs. Beat eggs in separate bowl.
Add butter mixture, eggs, milk, cheese, salt and pepper to the dry ingredients.
Mix until combined.
Fill greased muffin pans – I have used green ones to represent the colour of the day and my intentions.
Bake at 180C for 15 to 18 minutes or until a skewer comes out clean.
Cool on a cooling rack.
I have chosen to decorate mine by piping goats cheese mousse on top and fresh herbs to garnish.
